It\u2019s made with crisp celery ribs, sweet-tart apple, fennel, red onion, fresh parsley, grated parmesan and toasted walnuts. All of which are in perfect harmony with the light dressing made with whole grain mustard and freshly squeezed lemon juice. It may sound like a strange mix, but it is truly delicious! Plus, it fast. Prepping the ingredients involves a bit of slicing and toasting the nuts, but beyond that, it all comes together in no time at all! Ready in just 15 minutes, it\u2019s perfect for light lunches, elegant starters or make-ahead meal prep.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients Overview: What\u2019s in this Celery Fennel Apple Salad<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Celery, fennel &amp; apple<\/strong> \u2013 crisp trio for crunchy bites<\/li>\n\n\n\n<li><strong>Red onion &amp; parsley<\/strong> \u2013 adds freshness and mild sharpness<\/li>\n\n\n\n<li><strong>Walnuts, Parmesan &amp; chives<\/strong> \u2013 for nuttiness, savoury depth and garnish<\/li>\n\n\n\n<li><strong>Lemon\u2011Dijon vinaigrette (garlic, mustard, olive oil)<\/strong> \u2013 bright and mellow<\/li>\n<\/ul>\n\n\n\n<p><em>Tip:<\/em> Swap walnuts for pecans or hazelnuts. Use Gruy\u00e8re in place of Parmesan for a sweeter twist.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Tips for preparing the fennel<\/h3>\n\n\n\n<p>For preparing the fennel, I either shave it using a <a href=\"https:\/\/amzn.to\/2TXqhCt\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">mandoline<\/a> (and handguard!) or quarter it, core it and use a really sharp knife to slice it into really thin pieces. This is also how I prepare the apple pieces. I also like to cut the celery into quite thin pieces. Celery stalks, fennel and apple are pretty much a dream team here, so I wouldn\u2019t split this trio. And one other thing you can\u2019t really change too much here though, is the cheese. This salad is all about the cheese. The king of Italian cheese for that matter \u2013 <a href=\"https:\/\/www.parmigianoreggiano.com\/\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Parmigiano-Reggiano<\/a>. It\u2019s a hard, salty unpasteurized cow\u2019s milk cheese exclusively from the Emilia-Romagna region of Italy and terrific with raw vegetables and fruit. And although they are not the same, you can use Parmigiano-Reggiano, Grana Padano or Pecorino Romano interchangeably in this recipe. Whatever you prefer. This crunchy celery salad is also a perfect option for outdoor cookouts and picnics, as it hold up well so there is no wilting to be had like salads made from leafy greens. And since the apples are tossed in the dressing during the preparation, this prevents them from browning (oxidation).
