{"id":53149,"date":"2018-03-03T20:00:54","date_gmt":"2018-03-03T19:00:54","guid":{"rendered":"https:\/\/ellerepublic.de\/gruenkernsalat-griechischer-art\/"},"modified":"2020-04-28T20:11:19","modified_gmt":"2020-04-28T18:11:19","slug":"greek-gruenkern-salad","status":"publish","type":"post","link":"https:\/\/ellerepublic.de\/en\/greek-gruenkern-salad\/","title":{"rendered":"Greek Gr\u00fcnkern Salad with Chickpeas"},"content":{"rendered":"<p>This Greek-style Gr\u00fcnkern salad with chickpeas features bold Mediterranean flavors (lemon, herbs, sweet red peppers, cucumber and feta), tossed with warm, whole grains.<\/p>\n<p>The key ingredient to this salad, of course, is one of my favorite grains of late &#8212; <a href=\"https:\/\/en.wikipedia.org\/wiki\/Gr%C3%BCnkern\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Gr\u00fcnkern<\/a>. And of course my favorite legume &#8212; chickpeas. Since this is one of my go-to weeknight salads, I like to use organic canned chickpeas, cause it just makes life easier. This is great if you forgot to soak them overnight. Bring to a boil and cook for 1 minute, then cover and remove from the heat. Leave them to soak for 1 hour, then rinse and cook as you would if you had soaked them overnight.<\/li>\n<\/ul>\n<p>Just remember, dried chickpeas will triple in size when cooked (if not a little bit more), so you will need less. Or feel free to make a batch and enjoy them all week. If you\u2019ve never tried Gr\u00fcnkern before, this is a great way to get acquainted with this delicious grain. It has a mild, nutty flavor and a delicious chewy texture. It\u2019s the perfect thing for upgrading salads so they can be enjoyed as a main meal. You can also swap out Gr\u00fcnkern for barley, spelt, <a href=\"https:\/\/www.thespruceeats.com\/what-is-freekeh-3376846\" rel=\"nofollow noopener noreferrer\" target=\"_blank\">freekeh<\/a>, or even
