I absolutely love it raw in salads or on its own cut up like carrot sticks, and surprisingly, if you add it to soups or steam it, it completely transforms itself into yet another class of flavor.<\/p>\n\n\n\n<p>Flavor and texture-wise, raw kohlrabi has an apple-like crunch, which slightly resembles a radish in texture and has a similar taste to broccoli stem, but much juicier and sweeter \u2013 and not sure if you\u2019ll detect it but I think there is little hint of a summer turnip in the mix too. You can find kohlrabi in either in green or purple. When the plant is young and the leaves are fresh you can take the leaves and cook them much in the way you would spinach, collard greens or other leafy greens. They are great in stir-fries, steamed or simply saut\u00e9ed with a little olive oil and garlic. You can even eat the smaller leaves, chopped and tossed in a salad &#8212; or do as I do, toss them in your morning smoothie.<\/p>\n\n\n\n<p>Kohlrabi packs a decent amount of fiber, which is important for a healthy digestive system &#8212; plus it has a high nutrient-to-calorie ratio. This is important since the higher the nutrients per calorie, the healthier the food, making it extra great for anyone concerned with watching their weight. It really speeds things up. This year I invested in a \u201cfancy\u201d <a href=\"https:\/\/amzn.to\/2XabXXA\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">mandoline<\/a> \u2013 one of those ones that can also julienne \u2013 you know&#8230; it can slice everything into matchsticks. Love it!
