I\u2019ll admit it: I\u2019m completely obsessed with sweet potatoes.<\/p>\n\n\n\n<p>Sadly, this enthusiasm isn\u2019t always met with open arms at home. But slowly\u2014one dish at a time\u2014I\u2019m making progress. Sweet potatoes may never inspire the \u201cL\u201d word, or prompt an enthusiastic <em>\u201cI\u2019m craving sweet potatoes tonight!\u201d<\/em>, but the sighs and half-hearted grunts have disappeared. I\u2019ll take that as a win.<\/p>\n\n\n\n<p>And honestly, sweet potatoes deserve better than my mother\u2019s simple version, baked and served with butter. They\u2019re endlessly versatile, deeply comforting, and absolutely shine in this dish. Here\u2019s what you\u2019ll need:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Sweet potatoes<\/strong> \u2013 Organic if you can, for the best flavour and natural sweetness.<\/li>\n\n\n\n<li><strong>Olive oil<\/strong> \u2013 A good-quality <a href=\"https:\/\/amzn.to\/4qfJ5c8\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">olive oil<\/a> makes all the difference here.<\/li>\n\n\n\n<li><strong>Chickpeas<\/strong> \u2013 Tinned chickpeas keep things quick and easy, no soaking required.<\/li>\n\n\n\n<li><strong>Millet<\/strong> \u2013 Naturally gluten-free, wonderfully nourishing, and one of the oldest cultivated grains around.<\/li>\n\n\n\n<li><strong>Spices &amp; herbs<\/strong> \u2013 Fresh thyme adds a Mediterranean note, chilli flakes bring gentle heat, and smoked paprika gives depth. The yoghurt sauce comes alive with fresh mint, parsley and coriander, plus sea salt and black pepper.<\/li>\n\n\n\n<li><strong>Pomegranate seeds<\/strong> \u2013 Bright, juicy and irresistibly crunchy. Ideal for stress-free dinners or relaxed entertaining. Here\u2019s how to make oven-roasted sweet potatoes with chickpeas:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step 1) Prep the vegetables<\/h3>\n\n\n\n<p>Toss the sweet potato wedges with olive oil, fresh thyme and chilli flakes. Coat the chickpeas with olive oil, smoked paprika and salt. Preheat the oven and spread everything out on two separate baking trays.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step 2) Roast until golden<\/h3>\n\n\n\n<p>Roast the sweet potatoes first, adding the chickpeas a little later. Keep everything well spaced and turn once so it roasts evenly and becomes beautifully crisp and golden.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step 3) Cook the millet<\/h3>\n\n\n\n<p>Cook the millet according to the packet instructions until fluffy and tender. If serving warm, time it so it\u2019s ready as the vegetables come out of the oven.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step 4) Dress and serve<\/h3>\n\n\n\n<p>Stir together the yoghurt sauce. This ancient grain (technically a seed) cooks up light and fluffy, with a gently nutty, slightly sweet flavour. It\u2019s wonderfully versatile and makes an excellent naturally gluten-free alternative to couscous.<\/p>\n\n\n\n<p>Because the grains are so small, millet cooks quickly and triples in volume once prepared \u2014 meaning you only need about one-third of a cup dry millet for this recipe.<\/p>\n\n\n\n<p>Combined with iron- and calcium-rich millet, protein-packed chickpeas and vitamin A\u2013rich roasted sweet potatoes, this dish delivers both flavour and nourishment. Season with salt and pepper. Roast in the top third of the oven for 30 minutes. Turn the wedges over and roast for 5 to 10 more minutes, until soft and lightly charred at the edges.<\/div><\/li><li id=\"wprm-recipe-57021-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"5\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Meanwhile, spread chickpeas on second baking sheet. Once the sweet potatoes have cooked for 20 minutes, transfer the chickpeas to the oven. Roast for 20 minutes, shaking the pan once or twice so that they cook evenly, until lightly browned. Remove both baking trays from the oven and set aside.<\/div><\/li><li id=\"wprm-recipe-57021-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"6\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Prepare the millet according to package instructions. After 10-15 minutes all the water should be absorbed and the millet cooked.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\"><strong>Note<\/strong>: I serve this dish at room temperature, but if you want to serve this dish warm, then prepare the millet as soon as you put the chickpeas in the oven.<\/span><\/div><\/li><li id=\"wprm-recipe-57021-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"7\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Meanwhile, in a small bowl, whisk together the dressing ingredients and season with salt and pepper to taste.<\/div><\/li><li id=\"wprm-recipe-57021-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"8\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Arrange the roasted sweet potatoes and chickpeas, along with the millet on a platter (I do a layer with half the sweet potatoes, half the chickpeas, half the millet, and repeat with the remains). Drizzle some of the yogurt over top.
