It\u2019s a perfect bring-along side dish for picnics, potlucks and barbecues. This variation made with a grainy Dijon, cider vinegar dressing is mayo-free and packed with flavour.<\/p>\n\n\n\n<p>I have some many variations of green bean and potato salads, as it\u2019s a summer classic that everyone loves, in one form or another. This version is a beautiful combination of boiled new potatoes, organic smoked bacon, fresh herbs, spring onions, radishes and capers \u2014 all of which give this simple potato salad a fresh tasting, medley of flavours. Here&#8217;s what you&#8217;ll need:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>New potatoes<\/strong>: No need to peel the small potatoes \u2014 just scrub them clean with a brush.<\/li>\n\n\n\n<li><strong>Bacon<\/strong>: Smoked bacon cut into small cubes adds a hearty flavour. Opt for organic quality if possible.<\/li>\n\n\n\n<li><strong>Green beans<\/strong>: In season from July to October, but available year-round. Fresh green beans taste best.<\/li>\n\n\n\n<li><strong>Radishes<\/strong>: Thinly sliced for crunch and a peppery freshness.<\/li>\n\n\n\n<li><strong>Fresh herbs<\/strong>: Dill and flat-leaf parsley add bright, herby flavour.<\/li>\n\n\n\n<li><strong>Spring onions, garlic, and capers<\/strong>: This trio adds a punch of freshness. Season to taste.<\/li>\n<\/ol>\n\n\n\n<p><em>Exact ingredient quantities are in the printable recipe card below!<\/em><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Tips for making this potato and green bean salad<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">1) For the potatoes.<\/h3>\n\n\n\n<p>It all starts with choosing the right potato. I like to go to my local farmers market as there are many types to chose from. For this recipe, I decided on a French variety of new potato. Most important is that the potatoes are firm (waxy) and hold their shape when cooked. And I like to chose ones that have a really thin, clear skin, which means no peeling required! Plus extra vitamins! Red skinned ones are also one of my favourite choices.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">2) For the green beans.<\/h3>\n\n\n\n<p>For this mayo-free potato salad recipe, I like to blanch the green beans after the potatoes are done, as this lets the potatoes cool down while tossed in the dressing (also so they soak up the flavours) as I prepare the rest of the salad. Most important for the green beans is to give them a cold bath after blanching them.
