Inspired by Middle Eastern cuisine this quinoa salad is made with lots of herbs (not unlike tabouleh), juicy tomatoes, red onion, arugula and pistachios. Everything is drizzled with dressing made with a mix of olive oil, lemon, a little chili, garlic and an amazing za\u2019atar blend. It\u2019s a great all-around spice blend that gives everything from salads to roast vegetables a flavour boost. It contains sumac, which comes from dried sumac berries and tastes like a combination of tangy sour and fruity-lemony taste. It\u2019s also a favourite in my kitchen as it brightens up any dish! If you haven\u2019t heard of either of these spices before, I definitely recommend trying them. But, it is also really great served alongside grilled or roasted vegetables, with grilled halloumi, or even your favourite choice of protein right off the BBQ.<\/p>\n<h2>Plan ahead and serve this quinoa salad in a flash<\/h2>\n<p>If you precook your quinoa this meal comes together in a flash. A batch of quinoa can always be made ahead of time and stored in the fridge until you are ready to use it for your weekday meals.
