Here they are blistered on a grill plate which intensifies their flavour and brings out their rich sweet juices before they are added to the risotto. Which is served topped with grilled zucchini goats cheese parcels \u2014 adding a little bit of luxury to your meal with this simple recipe.<\/p>\n\n\n\n<p>I enjoy this risotto as a meatless main dish, but it also makes a great side dish for just about anything you want to grill on the side. Whether it be prawns, a fish filet or other protein of choice. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredient Tips For The Perfect Tomato Risotto<\/h2>\n\n\n\n<p>Choosing the right ingredients is the secret to a risotto that\u2019s rich, creamy, and full of flavour. This will allow you to cook at more precise temperatures and keep your food warm while other items may still be cooking. This is exactly what I did when blistering the tomatoes, while the risotto continued to cook. And once I was ready to grill the zucchini parcels I was able to heat up the grill side of the plate. Simmer, stirring until most of the liquid is absorbed. Continue adding broth 1 ladle at a time, letting the rice absorb it slowly, stirring often over medium heat, until the rice is al dente, yet creamy, about 20-25 minutes.<\/div><\/li><li id=\"wprm-recipe-63013-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"4\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\"><strong>Meanwhile, blister the tomatoes:<\/strong> use a silicon-brush to coat your grill plate (or cast-iron skillet) with a little oil and heat the smooth side of the grill plate to medium-high heat for 2 minutes, then medium heat. Add tomatoes (whole) and sear, turning occasionally, until they burst and soften, about 7-8 minutes, reducing heat as necessary. Turn heat off.<\/span><\/div><\/li><li id=\"wprm-recipe-63013-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"5\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\"><strong>Finish off the risotto: <\/strong>Stir in the butter and parmesan. Then add the tomatoes and stir, until well incorporated. Stir until well combined. Season generously with salt and pepper. Taste, adjust seasoning as needed.<\/span><\/div><\/li><li id=\"wprm-recipe-63013-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"6\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Serve immediately as a flavorful vegetarian main, topping with the cheese filled zucchini parcels (if preparing) and additional garnish of basil, parmesan or pine nuts, if desired.
