I particularly love using black beluga lentils for this type of salad however they can be used interchangeably with <a href=\"https:\/\/www.tastefrance.com\/de\/basics\/fruechte-und-gemuese\/puy-linsen-aop\" target=\"_blank\" rel=\"noopener\">French puy lentils<\/a> (green lentils). Both have a great have a great al dente texture when cooked, making them prefect for salads.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">How to adapt this vegan lentil salad?<\/h2>\n\n\n\n<p>What I love about this vegan lentil salad is that it incorporates a variety of plant-based foods. The oranges add some welcome sweetness to earthy lentils, and pair well with carrots, beet and red cabbage. However you could leave the oranges out, our trade them for <strong>pomegranate<\/strong> <strong>seeds<\/strong>, or use a mix of both.<\/p>\n\n\n\n<p>You could also easily make this salad without the beetroot. Or use <strong>roasted carrot and beetroot<\/strong> in place of the raw vegetables. As for the nuts, try a handful of <strong>toasted<\/strong> <strong>cashews<\/strong>, or even <strong>toasted mixed seeds<\/strong>.
