Die Schoko Cookies werden mit gemahlenen Mandeln, unges\u00fc\u00dften Kokoschips und Kakao Nibs gebacken. Und zum S\u00fc\u00dfen habe ich unraffinierten Mascobado Vollrohrzucker und einen Spritzer Ahornsirup verwendet. So geht Naschen ohne schlechtes Gewissen!<\/p>\n\n<p>Kokos\u00f6l und <a href=\"https:\/\/amzn.to\/472hXDY\" target=\"_blank\" rel=\"nofollow noopener\">Kokoschips<\/a> geben den Pl\u00e4tzchen ein exotisches Kokosaroma, das so subtil ist, dass auch Pl\u00e4tzchen-Fans damit klar kommen, die nicht so sehr auf Kokosnuss stehen. Und die rohen Kakao Nibs sorgen f\u00fcr ein Knuspererlebnis, das an dunkle Schokolade erinnert. Trotzdem habe ich noch dunkle Schokolade dazu gegeben, so dass diese weichen Kekse sehr schokoladig daherkommen. Du bekommst also Schokolade, Mandeln und Kokos in einem Bissen. Ich glaube ja, dass du alles leicht \u00fcberall bekommst, aber man wei\u00df ja nie:<\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Mandelmehl &#8211;<\/strong> Ich verwende am liebsten nat\u00fcrliches Mandelmehl mit der Schale f\u00fcr dieses Pl\u00e4tzchenrezept. Es funktionieren auch blanchierte gemahlene Mandeln. Die Pl\u00e4tzchen bekommen dann eine feinere Textur und eine hellere Farbe. Da dieses <strong>Keksrezept ohne Mehl<\/strong> auskommt, kannst du sicher sein, dass auch die Pl\u00e4tzchen glutenfrei sind.<\/li>\n\n\n\n<li><strong>Rohe Kakao Nibs &#8211;<\/strong> Die rohen Schokost\u00fccke sind voller Antioxidantien und sie haben ein tiefes Schokoaroma wie dunkle Schokolade. Da sie sch\u00f6n knusprig sind, kommt es dir vielleicht vor, dass Nussst\u00fccke in den Keksen sind. Vom Geschmack her sind sie leicht bitter und schmecken nach Nuss. Sie geben den Kokospl\u00e4tzchen ein unerwartetes Aroma, das Lust auf mehr macht. Deswegen sind sie auf jeden Fall zu empfehlen!<\/li>\n\n\n\n<li><strong>Kokoschips &#8211;<\/strong> Ich habe unges\u00fc\u00dfte Bio-Kokoschips genommen und grob gehackt. Sie sind nicht mit fein geriebenen Kokosraspeln zu verwechseln. Die Chips geben den Keksen ein subtiles Kokosaroma, ohne zu dominieren. Und knusprig sind sie auch noch!<\/li>\n\n\n\n<li><strong>Mascobado Vollrohrzucker &#8211;<\/strong> Dieser nat\u00fcrliche unraffinierte Vollrohrzucker gibt den Keksen einen leichten Karamellgeschmack.<\/li>\n\n\n\n<li><strong>Kokos\u00f6l &#8211;<\/strong> Damit kommt noch mehr Kokosaroma in die Kekse, aber der Kokos-Geschmack bleibt immer noch mild und ist nicht zu dominant. Die Intensit\u00e4t kannst du mit der Auswahl eines noch milderen Kokos\u00f6ls reduzieren.<\/li>\n\n\n\n<li><strong>Ei &#8211;<\/strong> Das Ei kannst mit einem Chia Ei-Ersatz austauschen (siehe Tipps weiter unten). Das ist auch gut, wenn du vegane Pl\u00e4tzchen m\u00f6chtest.<\/li>\n\n\n\n<li><strong>Gew\u00fcrze &#8211;<\/strong> F\u00fcr etwas Vanille-Geschmack habe ich Bourbon Vanillepulver genommen. Und eine Prise Ingwer gibt den Keksen einen w\u00e4rmenden aromatischen Geschmack.<\/li>\n\n\n\n<li><strong>Dunkle Schokolade &#8211;<\/strong> Ich empfehle dir eine Schokolade zu nehmen, die du sehr gerne magst, denn dann schmecken auch die Schoko-Kekse genauso, wie du es m\u00f6chtest. In wenigen Schritten hast du die gesunden Pl\u00e4tzchen fertig. Mit dieser Kurzanleitung kann nichts schief gehen:<\/p>\n\n<ol class=\"wp-block-list\">\n<li><strong>Trockene Zutaten vermischen<\/strong>: Als Erstes gibst du die gemahlenen Mandeln, Kakao Nibs, Backpulver, Vanillepulver, Ingwer, Salz und Zucker in eine gro\u00dfe R\u00fchrsch\u00fcssel und vermischt alles gut. Das geht ganz schnell!<\/li>\n\n\n\n<li><strong>Feuchte Zutaten vermischen<\/strong>: In einer extra Sch\u00fcssel schl\u00e4gst du zuerst das Ei zu einer schaumig-luftigen Masse. Dann r\u00fchrst du das geschmolzene Kokos\u00f6l und Ahornsirup dazu. <\/li>\n\n\n\n<li><strong>Alles vermischen und ruhen lassen<\/strong>: Nachdem du die beiden Mixe vereint hast, kommt die Sch\u00fcssel in den K\u00fchlschrank. Ich mache das gerne \u00fcber Nacht, aber du solltest mindestens 30 Minuten daf\u00fcr einplanen, damit sich der Teig festigt.<\/li>\n\n\n\n<li><strong>Backen<\/strong>: Aus dem gek\u00fchlten Teig formst du Kugeln, die du auf ein Backblech legst und mit einem L\u00f6ffel etwas platt dr\u00fcckst (vgl. Bilder). F\u00fcr den Teig ist es gut, wenn deine H\u00e4nde auch kalt sind und du sie schnell rollst, damit der Teig nicht warm wird. Sie bleiben dann ca. 10 Minuten im Ofen. Ja, so schnell geht das wirklich! <\/li>\n\n\n\n<li><strong>Schokoguss<\/strong>: Jetzt nur noch abk\u00fchlen lassen und geschmolzene Schokolade dar\u00fcber l\u00f6ffeln. Die Schokolade hast du vorher in einem Wasserbad geschmolzen. Das geht auch schnell! Sobald die Schokolade sich gefestigt hat, sind die Schoko-Kekse fertig. <\/li>\n<\/ol>\n\n<p><em>Die genauen Zutaten und Mengen f\u00fcr das Rezept f\u00fcr Schoko-Kekse mit Kokos findest du unten in
