This Asparagus and Mango Salad is a healthy, easy side dishes for any occasion. Made with fresh cilantro, fresh red chili and freshly squeezed lime juice.
For the salad:
2small or 1 large firm but ripe mangos, peeled and finely sliced
1red onion,finely chopped
1bunch cilantro,leaves removed
For the dressing:
5tablespoonextra-virgin olive oil
1fresh red chili,seeded and chopped
Snap off the woody ends of the asparagus. Blanch the asparagus in plenty of boiling salted water for 3-4 minutes (depending on thickness). Remove with tongs, or drain in a colander, and immediately transfer to icy cold water to cool. Remove from the cold water and drain well.
In a small bowl, combine the dressing ingredients.
Toss the asparagus, mango slices, red onion and cilantro with the dressing and serve.
