3cupsold fashioned oats(I use 4-grain flakes made from oats, barley, rye & spelt) (300 g)
1/3cupalmondschopped (40 g)
1/3cupwalnutschopped (40 g)
1/2cupunsweetened coconut flakes,(30 g)
1/3cupraw cacao powder,(30 g)
pinchof sea salt
100gorganic dark chocolate chips(55% cacao)
Method
Preheat oven to 340°F / 170°C and line a baking tray with parchment paper.
In a large bowl, mix together the melted coconut oil, maple syrup and vanilla until combined.
Add the oats, chopped nuts and coconut flakes. Stir until coated. Add the cacao and salt; mix well until combined. Finally, add the chocolate chips and stir again to combine.
Spread the mixture evenly onto the lined baking sheet and bake in the middle of the oven for 17-23 minutes. Watch carefully the last minutes to ensure it doesn't burn!
Remove from the oven and set aside on a wire rack to cool in the baking tray.
Once the chocolate granola is fully cooled, transfer the granola to a glass jar or other airtight container.
This chocolate granola can be stored in an airtight container for 2-3 weeks. But I guarantee it won’t last that long! Enjoy! :)
