Ingredients
- 6 tablespoons melted coconut oil (60 g)
- 100 ml pure maple syrup
- 1 teaspoon pure vanilla powder
- 3 cups old fashioned oats (I use 4-grain flakes made from oats, barley, rye & spelt) (300 g)
- 1/3 cup almonds chopped (40 g)
- 1/3 cup walnuts chopped (40 g)
- 1/2 cup unsweetened coconut flakes, (30 g)
- 1/3 cup raw cacao powder, (30 g)
- pinch of sea salt
- 100 g organic dark chocolate chips (55% cacao)
Instructions
- Preheat oven to 340°F / 170°C and line a baking tray with parchment paper.
- In a large bowl, mix together the melted coconut oil, maple syrup and vanilla until combined.
- Add the oats, chopped nuts and coconut flakes. Stir until coated. Add the cacao and salt; mix well until combined. Finally, add the chocolate chips and stir again to combine.
- Spread the mixture evenly onto the lined baking sheet and bake in the middle of the oven for 17-23 minutes. Watch carefully the last minutes to ensure it doesn't burn!
- Remove from the oven and set aside on a wire rack to cool in the baking tray.
- Once the chocolate granola is fully cooled, transfer the granola to a glass jar or other airtight container.
- This chocolate granola can be stored in an airtight container for 2-3 weeks. But I guarantee it won’t last that long! Enjoy! :)
