70grolled oats (fine-cut)
500mlunsweetened rice-coconut-milk
2teaspoonsmaple syrup (or honey),for serving
Method
Combine the apricots, cinnamon, and water in a small pot. Heat over medium-high until it begins to simmer and steam. Reduce to low heat and gently cook for 2 minutes.
Add the oats and plant-based milk to the pot. Stir well and bring to a gentle boil over medium-high heat. Reduce to low and let it simmer, stirring occasionally, until the porridge thickens (about 5-7 minutes).
Divide the porridge into two bowls and drizzle each with a little maple syrup.
