Ingredients
- 8 dried apricots, finely diced (70 g)
- 1/4 tsp cinnamon (Ceylon)
- 4 tablespoons water
- 70 g rolled oats (fine-cut)
- 500 ml unsweetened rice-coconut-milk
- 2 teaspoons maple syrup (or honey), for serving
Instructions
- Combine the apricots, cinnamon, and water in a small pot. Heat over medium-high until it begins to simmer and steam. Reduce to low heat and gently cook for 2 minutes.
- Add the oats and plant-based milk to the pot. Stir well and bring to a gentle boil over medium-high heat. Reduce to low and let it simmer, stirring occasionally, until the porridge thickens (about 5-7 minutes).
- Divide the porridge into two bowls and drizzle each with a little maple syrup.
- Enjoy this creamy and nourishing breakfast!
