Ingredients
For the pancakes:
- 200 g all-purpose flour
- 70 g whole wheat flour
- 500 ml whole milk
- 1 x 8g package organic vanilla sugar
- Pinch of sea salt
- 5 eggs, lightly beaten
- Ghee, for greasing the cooking surface
For the apples:
- 2 large apples, peeled, cored and thinly sliced (ca. 500 g)
- 2 tablespoons raw cane sugar
- 1 teaspoon cinnamon (ceylon)
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
Instructions
- In a large mixing bowl, combine both flours. Add the milk and whisk together until smooth. Let stand 30 minutes.
- Add the salt, vanilla sugar and eggs. Whisk together until well-combined and batter is smooth.
- To prepare the apples, in a small bowl, mix together the spices. Transfer the sliced apples to a mixing bowl, toss the apple slices with the spices until evenly coated. Set aside.
- Preheat a table grill (or a large, non-stick skillet) to medium-high heat (setting 8 on the LeMax grill) for 5 minutes. To test if it's hot enough, throw a few drops of cold water on the hot surface. The drops should sizzle immediately.
- Coat the surface with a small dab of ghee (1 teaspoon or so).
- Using a ladle, pour some of the batter onto the hot surface. Top with apple slices. Cook until golden brown and firm, then gently flip and cook on the other side for 1-2 more minutes. (see video). Repeat until batter is used up, add a little more ghee between rounds.
