Ingredients
- 1 x 400 g can chickpeas, rinsed and drained
- 1/4 tsp ground cumin
- 1 cucumber, deseeded and thinly sliced
- 1 red bell pepper, deseeded and diced
- 1 small red onion, finely chopped
- 6 tbsp fresh flat-leaf parsley, finely chopped
- 1 tbsp extra virgin olive oil
- Juice of 1/2 lemon, or more to taste
- Pinch of sea salt and freshly ground black pepper, to taste
- 50 g feta cheese, crumbled
- Thinly sliced radish for garnish (optional)
Instructions
- In a large salad bowl, mix the chickpeas with cumin. Add the cucumber, bell pepper, onion, and parsley.
- Drizzle the olive oil and lemon juice over the salad, season with salt and pepper, and toss until combined.
- Sprinkle the crumbled feta on top and garnish with radish slices if you like.
