Ingredients
- 1 ripe papaya
- 1 avocado
- 1 red onion, halved and sliced
- 1 red chili, seeds removed and thinly sliced
- 1 tablespoon extra virgin olive oil
- 2 tablespoons freshly squeezed lime juice (about 1 lime)
- 1 tablespoon finely chopped fresh mint
- sea salt, to taste
Instructions
- In a small bowl, combine chili, olive oil, lime juice, mint leaves, and a pinch of sea salt.
- In a large serving bowl, add the papaya, avocado and red onion. Pour the dressing over the salad and toss lightly to combine. Enjoy!
