1large fennel bulb,thinly sliced
1pink grapefruit,peeled, sectioned and juices reserved
1celery stalk,thinly sliced
3tablespoonsextra-virgin olive oil
1tablespoonfreshly squeezed lemon juice
1tablespoonfresh chopped mint leaves
sea salt and freshly ground pepper,to taste
Method
In large bowl, whisk together 1 tablespoon (or more) of the reserved grapefruit juice, olive oil, lemon juice, chopped mint, salt and pepper. Add the sliced fennel, grapefruit, and celery; toss gently to combine. Season with salt and pepper, to taste. Serve and enjoy!
