500gwhite turnips,peeled and diced (1–1.5 cm)
500gnew potatoes,peeled and diced (1–1.5 cm)
3tablespoonsolive oil,divided
1medium onion,finely diced
2garlic cloves,minced
2teaspoonsfresh thyme,chopped
1/8tspcrushed red pepper flakes
Sea salt and freshly ground black pepper,to taste
100gcooked ham (e.g., prosciutto cotto),diced
Method
Bring a large saucepan of salted water to a boil. Add turnips and potatoes, cook for 3 minutes. Drain thoroughly.
In a large non-stick skillet, heat 1 tablespoon olive oil over medium-high heat. Add onion and cook, stirring, until just softened (about 3 minutes).
Add garlic, thyme, salt, and red pepper flakes. Sauté until fragrant, about 30 seconds.
Stir in the remaining 2 tablespoons olive oil, then add the turnips, potatoes, and ham. Cook, stirring occasionally, until vegetables are tender and golden at the edges (about 12 minutes).
Serve warm, ideally topped with a fried egg for extra richness. Enjoy!
