Ingredients
- 500 g white turnips, peeled and diced (1–1.5 cm)
- 500 g new potatoes, peeled and diced (1–1.5 cm)
- 3 tablespoons olive oil, divided
- 1 medium onion, finely diced
- 2 garlic cloves, minced
- 2 teaspoons fresh thyme, chopped
- 1/8 tsp crushed red pepper flakes
- Sea salt and freshly ground black pepper, to taste
- 100 g cooked ham (e.g., prosciutto cotto), diced
Instructions
- Bring a large saucepan of salted water to a boil. Add turnips and potatoes, cook for 3 minutes. Drain thoroughly.
- In a large non-stick skillet, heat 1 tablespoon olive oil over medium-high heat. Add onion and cook, stirring, until just softened (about 3 minutes).
- Add garlic, thyme, salt, and red pepper flakes. Sauté until fragrant, about 30 seconds.
- Stir in the remaining 2 tablespoons olive oil, then add the turnips, potatoes, and ham. Cook, stirring occasionally, until vegetables are tender and golden at the edges (about 12 minutes).
- Serve warm, ideally topped with a fried egg for extra richness. Enjoy!
