For the Salad:
200gstrawberries,quartered
250gcherry or grape tomatoes,halved
1small red onion,finely diced
1avocado,cut into 1/2-inch cubes
2cupscubed watermelon (1/4 piece, approximately 1 kg),diced
100gGreek feta,crumbled
1/2tablespoonpoppy seeds(optional)
For the Dressing:
2tablespoonsextra-virgin olive oil
1/2teaspoongrated lime zest(from organic lime)
1tablespoonfresh lime juice
3tablespoonschopped mint
Sea salt and freshly ground pepper,to taste
Method
In a small bowl, whisk together the dressing ingredients (olive oil, lime zest and juice, chopped mint). Season with sea salt and freshly ground pepper, to taste.
In a large mixing bowl, gently combine the strawberries, tomatoes, red onion, avocado, watermelon, and feta cheese. If you're using poppy seeds, sprinkle them in at this stage.
Pour the dressing over the salad and toss gently to ensure everything is well coated. Serve immediately to enjoy the fresh, vibrant flavours.
Notes
Choose a ripe but firm avocado to maintain its shape and texture in the salad. If making ahead, keep the avocado and dressing separate until just before serving to ensure the avocado stays fresh and vibrant.
