Ingredients
For the Salad:
- 200 g strawberries, quartered
- 250 g cherry or grape tomatoes, halved
- 1 small red onion, finely diced
- 1 avocado, cut into 1/2-inch cubes
- 2 cups cubed watermelon (1/4 piece, approximately 1 kg), diced
- 100 g Greek feta, crumbled
- 1/2 tablespoon poppy seeds (optional)
For the Dressing:
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon grated lime zest (from organic lime)
- 1 tablespoon fresh lime juice
- 3 tablespoons chopped mint
- Sea salt and freshly ground pepper, to taste
Instructions
- In a small bowl, whisk together the dressing ingredients (olive oil, lime zest and juice, chopped mint). Season with sea salt and freshly ground pepper, to taste.
- In a large mixing bowl, gently combine the strawberries, tomatoes, red onion, avocado, watermelon, and feta cheese. If you're using poppy seeds, sprinkle them in at this stage.
- Pour the dressing over the salad and toss gently to ensure everything is well coated. Serve immediately to enjoy the fresh, vibrant flavours.

- Choose a ripe but firm avocado to maintain its shape and texture in the salad. If making ahead, keep the avocado and dressing separate until just before serving to ensure the avocado stays fresh and vibrant.
