A super simple classic kid-centric German recipe. One that only requires scrounging a few staples together. Ham and Egg Noodles. It’s almost like having breakfast for dinner. Delicious!

Ingredients
500gspiral egg noodles
1tablespoonextra-virgin olive oil
1small onion,finely diced
300gham(preferably organic), chopped into bite-sized pieces
6large eggs
sea salt and freshly ground pepper,to taste
optional: add a handful of your favorite cheese,grated (Swiss cheese or Emmentaler work well, as does parmesan)
Method
Fill the large pot with cold water and a pinch of salt. Bring to a boil over high heat and add pasta, stirring occasionally to prevent the pasta from sticking. Cook according to packet instructions, until al dente.
Meanwhile, in large, deep skillet, heat oil over medium heat, add onions and sauté until fragrant, about 1-2 minutes. Add ham and sauté, covered, stirring occasionally for about 5-7 minutes, until onions are translucent and ham tender and lightly browned.
Add the drained noodles to the ham and onions, stir well to well combined. Add the eggs, mix to combine and continue cooking and stirring until eggs are cooked through..
Season with salt and pepper and serve immediately. Enjoy!
