Ingredients
- 500 g spiral egg noodles
- 1 tablespoon extra-virgin olive oil
- 1 small onion, finely diced
- 300 g ham (preferably organic), chopped into bite-sized pieces
- 6 large eggs
- sea salt and freshly ground pepper, to taste
- optional: add a handful of your favorite cheese, grated (Swiss cheese or Emmentaler work well, as does parmesan)
Instructions
- Fill the large pot with cold water and a pinch of salt. Bring to a boil over high heat and add pasta, stirring occasionally to prevent the pasta from sticking. Cook according to packet instructions, until al dente.
- Meanwhile, in large, deep skillet, heat oil over medium heat, add onions and sauté until fragrant, about 1-2 minutes. Add ham and sauté, covered, stirring occasionally for about 5-7 minutes, until onions are translucent and ham tender and lightly browned.
- Add the drained noodles to the ham and onions, stir well to well combined. Add the eggs, mix to combine and continue cooking and stirring until eggs are cooked through..
- Season with salt and pepper and serve immediately. Enjoy!
