German Ham and Egg Noodles (Schinkennudeln)

This is a super quick, super simple classic kid-centric German recipe. One that only requires scrounging a few staples together. Noodles. Eggs. Ham. It’s almost like having breakfast for dinner.

Whether you are looking for a tasty kids meal, are eating solo or just want to deliver something quick and easy, this recipe definitely fits the bill. Totally delicious, it’s one worth repeating…aaah…in about an hour. Really, the picture doesn’t do it justice. Fail on my part. The boys were hungry, sorry!

Ham and Egg Noodles

There are many variations of Schinkennudeln or “ham noodles”, some with cream and breadcrumbs, some with cheese, and some with all three. This simple version is courtesy of and cooked by my favorite Schwabe. The Bavarian version, I believe. Don’t expect to be wowed by a culinary masterpiece, this dish is simple and pure, but perfectly delicious in its own right — therefore, it makes a regular appearance in our home. For a more rounded meal I like to pair it with a simple cucumber salad or mixed greens. Enjoy!

German Ham and Egg Noodles (Schinkennudeln)

Ingredients

  • 500 g spiral egg noodles
  • 1 tablespoon extra-virgin olive oil
  • 1 small onion, finely diced
  • 300 g ham (preferably organic), chopped into bite-sized pieces
  • 6 large eggs
  • sea salt and freshly ground pepper, to taste
  • optional: add a handful of your favorite cheese, grated (Swiss cheese or Emmentaler work well, as does parmesan)

Method

  1. Fill the large pot with cold water and a pinch of salt. Bring to a boil over high heat and add pasta, stirring occasionally to prevent the pasta from sticking. Cook according to packet instructions, until al dente.
  2. Meanwhile, in large, deep skillet, heat oil over medium heat, add onions and sauté until fragrant, about 1-2 minutes. Add ham and sauté, covered, stirring occasionally for about 5-7 minutes, until onions are translucent and ham tender and lightly browned.
  3. Add the drained noodles to the ham and onions, stir well to well combined. Add the eggs, mix to combine and continue cooking and stirring until eggs are cooked through..
  4. Season with salt and pepper and serve immediately. Enjoy!
