  • 2 small yellow onions, finely chopped
  • 3 garlic cloves, minced
  • 1/2 tablespoon tomato paste
  • 2 tablespoons water
  • sea salt and freshly ground pepper, to taste
  • 1 teaspoon chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1 large bag natural tortilla chips (200 g)
  • 200 g cheddar cheese, freshly grated

To garnish:

  • 6-8 jarred sliced jalapeños, coarsely chopped
  • 2 tomatoes, chopped
  • 1-2 green onions, thinly sliced
  • Handful cilantro, leaved picked

Serving extras (optional):

  • Sour Cream
  • Salsa

Method

  1. Preheat the oven to 400°F / 200°C (180°C fan-assisted) and line a baking sheet with parchment paper (optional).
  2. In a large non-stick skillet, heat olive oil over medium heat. Add chopped onions and cook until softened (about 5 minutes). Add minced garlic and cook for another minute.
  3. Add sliced mushrooms to the pan and cook until they release their moisture and begin to brown (7-8 minutes). Stir in tomato paste and water. Then add the salt, pepper, chili powder, cumin, smoked paprika, and oregano. Cook for another 1-2 minutes, ensuring the mushrooms are well coated with the spices.
  4. Spread a layer of tortilla chips on the baking sheet. Evenly distribute half of the spiced mushroom mixture over the chips. Sprinkle half of the shredded cheddar cheese on top. Add another layer of tortilla chips, then the remaining mushroom mixture and the rest of the cheese.
  5. Transfer to the preheated oven and bake until the cheese is melted and bubbly (10 minutes).
  6. Remove from the oven and top with sliced jarred jalapeños, chopped tomatoes, green onions, and fresh cilantro.
