One Pot Dishes for Every Day

Let’s be real—when it comes to one-pot wonders, pasta is the reigning champ. There’s something magical about tossing your favorite noodles into a pot with a handful of simple ingredients, letting them cook together and transform into a creamy, comforting masterpiece. The secret? As the pasta cooks, it releases starch, thickening the sauce naturally. Whether you’re using farfalle (which need a little more time) or spaghetti (which cooks up quicker), the magic happens with just one pot and a little patience. Add in your choice of broth, tomato sauce, cream, or any other liquid you love, and you’ve got a no-fuss, hearty meal that’s perfect for any night of the week.

Feeling Like Something Different? Try Rice or Potatoes as the Base

Not in the mood for pasta? No problem! One-pot dishes work just as well with rice or potatoes. And if you’re trying to keep things light, you can swap the carbs for a colorful assortment of veggies. It’s a great way to get all the flavor and comfort of a one-pot meal, but in a lower-carb package. Of course, if you like a little meat with your meal, ground beef or chicken can be added in, but it’s totally optional. A perfect example of this versatility is my simple and delicious pearl barley soup—easy, hearty, and oh-so-good.

One-Pot Dishes: Beyond the Classic Pot

Who says a one-pot meal has to come from a traditional pot? Swap the pot for a pan, a baking dish, or even a baking sheet! The idea is the same: combine your carbs (pasta, rice, or potatoes) with all your ingredients and a little liquid, and let everything come together. One important note—when cooking on a baking sheet, you usually skip the liquid, but everything else stays the same. If you need an example, check out my Greek chicken skillet with tomatoes, feta, and olives. It’s simple, full of flavor, and can’t be beat when you’re craving something savory, comforting, and easy to whip up.
