Ingredients

  • 1 large cucumber (about 650 g or 2 smaller English cucumbers)
  • 1 shallot, very finely diced
  • 1 tablespoon white wine vinegar
  • 1/2 teaspoon sugar (I use organic beet sugar)
  • 2 tablespoons fresh dill, finely chopped
  • 125 g crème fraîche (about 1/2 cup)
  • Coarse sea salt and freshly ground black pepper, to taste

Method

  1. Prepare the cucumbers: Peel the cucumbers, slice them in half lengthwise, and scoop out the seeds. Using a mandoline or sharp knife, slice the cucumbers very thinly (about 2 mm thick).

  2. Drain excess moisture: Place the cucumber slices in a colander set over a bowl. Sprinkle with a generous pinch of salt and toss to combine. Cover with a plate and let sit for at least 30 minutes (or up to 1 hour) to draw out moisture.

  3. Rinse and dry: Rinse the cucumbers briefly under cold water to remove excess salt. Pat them dry with a clean kitchen towel or paper towel. Transfer to a serving bowl.

  4. Add shallots: Add the finely diced shallot to the bowl with the cucumbers and toss gently.

  5. Make the dressing: In a small bowl, mix the crème fraîche, white wine vinegar, sugar, dill, black pepper, and a pinch of sea salt. Stir until well combined. Pour the dressing over the cucumbers and toss to coat. Let the salad sit for at least 15 minutes to allow the flavors to meld.
