Healthier Choices for Grilled Steak
If you’re looking to enjoy all the flavour of a great grilled steak without compromising on your wellness goals, you’ve come to the right place. Making healthier choices doesn’t mean sacrificing taste; it means being thoughtful about where your beef comes from and how it’s prepared.
Opt for Leaner Cuts: When looking for beef that’s both delicious and better for your health, go for leaner options. They have less marbling but can still be tender and flavourful when cooked properly.
Choose Organic and Sustainably Raised Beef: Opting for organic beef means selecting meat from cattle raised without synthetic hormones or processed feed. These animals graze on natural pastures and consume a diet that improves their wellbeing and the nutritional quality of the meat, enhancing its flavour and health benefits. Moreover, sustainable practices prioritise animal welfare and environmental health, supporting a healthier planet. Choosing this beef promotes better farming methods that benefit both animals and the environment.
Key Steps for Perfect Steak
Room Temperature: Allow your steak to reach room temperature before grilling. This is crucial for even cooking, especially with leaner cuts that can toughen if grilled cold.
Preheat Your Grill: Make sure your grill is sufficiently hot before you place your steak on it. A hot grill helps the steak sear quickly, sealing in juices and reducing sticking.
Season Simply: Quality organic beef needs little more than salt and pepper. For extra flavour, consider a light marinade with acidic elements like lemon juice or vinegar, which tenderises without adding fat.
Monitor Cooking Time: Monitor lean cuts closely as they cook quickly. Aim for an internal temperature of about 140-145°F / 60-63°C for medium rare. If the steak releases easily from the grill, it’s ready to flip; if not, it needs more time. This ensures even cooking and optimal juiciness.
Rest Before Serving: Let the steak rest for at least 5 minutes post-grill to retain its juices—key for leaner cuts.
Slice Properly: Always slice steak against the grain to shorten muscle fibres, enhancing tenderness.

Easy Steak Salad Recipe with Tomatoes and White Beans
Quick and easy recipe for a grilled rump steak salad served over ripe vine tomatoes, fresh basil, and creamy white beans. Ready in just 25 minutes!
Ingredients
- 2 x 150 g rump steaks
- Salt and pepper, to taste
- Oil for the grill or grill pan
- 200 g ripe vine tomatoes, thinly wedged
- 100 g cherry tomatoes, halved
- 1 x 400 g can white beans (cannellini or butter beans), drained and rinsed
- 1 tablespoon red wine vinegar
- Squeeze of lemon juice
- 2 tablespoons extra-virgin olive oil
- Handful of fresh basil leaves
Method
-
Pat the rump steaks dry with paper towels and generously season them with salt and pepper on both sides. Allow them to rest at room temperature for about 30 minutes to 1 hour to ensure even cooking.
-
Preheat your grill or grill pan to medium-high heat. Lightly brush the grill pan or grill grates with a tablespoon of heat-resistant oil to prevent sticking. Place the seasoned steaks on the grill or grill pan. Cook for 1.5-2 minutes on each side for medium-rare to rare, adjusting the cooking time according to your desired level of doneness.
-
Transfer the cooked steaks to a cutting board and let them rest for 5 minutes. This allows the juices to redistribute, resulting in a juicier steak.
-
While the steaks are resting, arrange the sliced tomatoes and white beans on serving plates.
-
In a small bowl, whisk together the red wine vinegar, lemon juice, and extra-virgin olive oil to make the dressing. Season with salt and pepper to taste. Drizzle the dressing over the tomatoes and beans, and scatter the basil leaves on top.
-
After resting, slice the cooked rump steaks against the grain into thin strips. Arrange the sliced steak over the tomato and white bean salad on the plates. Serve and enjoy!
