Ingredients for Tomato and Peach Salad with Prosciutto & Feta
This quick and easy summer salad is made with just a few seasonal ingredients that sing when brought together:
- Heirloom and cherry tomatoes – ripe, juicy and colourful varieties work best.
- Yellow peaches – choose ripe but firm fruit for the ideal sweet bite.
- Prosciutto – baked until crisp for a salty crunch.
- Feta cheese – crumbly, creamy and tangy—adds richness and contrast.
- Fresh herbs – a mix of basil and mint gives this salad a lovely fresh finish.
- Simple lemon-shallot vinaigrette – made with lemon juice, red wine vinegar, olive oil and finely chopped shallot.
Tip: For a vegetarian version, simply leave out the prosciutto or swap it for toasted almonds for crunch.
How to Make This Tomato and Peach Salad with Herbs
This one’s as easy as summer gets…three simple steps, zero stress, and major flavour payoff. Let’s break it down:
1) Get that prosciutto crispy.
Pop it in the oven until it’s golden and crisp (like fancy bacon’s Italian cousin). No need to fuss, just lay it out and let the magic happen while you prep the rest.
2) Whisk up your dressing.
Tiny chopped shallots, lemon juice, a splash of red wine vinegar and olive oil. A quick whisk and boom, a zesty, punchy dressing done in under a minute.
3) Time to build your salad.
Toss your juicy peaches and tomatoes with the dressing, then shower it all with feta, crispy prosciutto bits, and those fresh herbs like it’s confetti. Done and delicious.

How to Adapt This Tomato and Peach Salad with Prosciutto
This peach and tomato salad with crispy prosciutto is wonderfully adaptable — think of it as your summer salad template. Whether you’re switching things up based on what’s ripe and ready or tailoring it to fit your preferences, here are a few easy tweaks:
- Swap peaches for nectarines. Equally sweet and juicy, nectarines are a seamless substitute and hold their shape beautifully.
- Mix in cucumber. Not a huge tomato fan? Replace part of the tomatoes with thinly sliced cucumber for extra crunch and freshness.
- Make it vegetarian. Simply leave out the prosciutto, or add a handful of toasted almonds or crispy roasted chickpeas for a savoury crunch.
- Change the cheese. Try creamy goat cheese, burrata, or even shavings of parmesan if feta’s not your thing.
The beauty of this summer salad with peaches and tomatoes is that it’s forgiving, fast, and full of flavour — perfect for adapting with what you have on hand!

Ingredients
For the salad:
- 400 g mixed heirloom tomatoes, sliced into wedges
- 200 g cherry tomatoes, halved
- 2 large ripe yellow peaches, sliced into wedges
- 100 g feta, crumbled
- A handful of fresh basil leaves, tear large ones
- A handful of fresh mint leaves, tear large ones
- 80 g prosciutto (about 6 slices)
For the dressing:
- 1 shallot, very finely chopped
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon red wine vinegar
- 2 tablespoons extra-virgin olive oil
- sea salt and freshly ground pepper, to taste
Method
-
Make the crispy prosciutto: Preheat oven to 350°F / 175°C and line a baking sheet pan with parchment paper. Spread prosciutto out on the sheet pan in a single layer (the prosciutto doesn’t need to be totally flat). Bake for 6–8 minutes, until crisp. Remove and let cool.
-
Make the dressing: In a small bowl, whisk together the chopped shallot, lemon juice, red wine vinegar, and olive oil. Season with salt and pepper to taste.
-
Assemble the salad: In a large salad bowl, combine the heirloom tomatoes, cherry tomatoes, and peach wedges. Drizzle with the dressing and gently toss to coat.
-
Add toppings and serve: Break the crispy prosciutto into bite-sized pieces. Scatter over the salad along with the crumbled feta, basil, and mint. Toss gently again and serve immediately. Enjoy!
