  • 500 g white turnips, peeled and diced (1–1.5 cm)
  • 500 g new potatoes, peeled and diced (1–1.5 cm)
  • 3 tablespoons olive oil, divided
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 2 teaspoons fresh thyme, chopped
  • 1/8 tsp crushed red pepper flakes
  • Sea salt and freshly ground black pepper, to taste
  • 100 g cooked ham (e.g., prosciutto cotto), diced

Method

  1. Bring a large saucepan of salted water to a boil. Add turnips and potatoes, cook for 3 minutes. Drain thoroughly.
  2. In a large non-stick skillet, heat 1 tablespoon olive oil over medium-high heat. Add onion and cook, stirring, until just softened (about 3 minutes).
