This delicious matcha porridge recipe makes for a quick breakfast that is loaded with antioxidants. Made with oats, oat milk and matcha powder this porridge is lightly sweetened with maple syrup and topped with fresh summer berries — superfood pure!
Inspired by a cafe in Cádiz
During a recent trip to Cádiz, in the Andalusian region of Spain, we fell in love with a little cafe that served all types of porridge and one in particular that we fell in love with — a vegan matcha porridge. Served with fresh, regional fruits and sometime edible flowers, together with a glass of freshly squeezed orange juice, this became a daily ritual. A simple but delicious bowl of porridge with matcha.
What is matcha
If you’re not familiar with matcha, it’s a Japanese green tea powder made from finely powdered dried tea leaves from the Camellia Sinensis plant. Although it is derived from the same plant as green tea, matcha is cultivated quite differently as the plants are covered with bamboo mats for the last three weeks before it is harvested in order to increase the amount of chlorophyll in the leaves. This is what gives the matcha powder it’s characteristically bright green colour. The ultra-silky ground green tea leaf powder has a delicate bitterness and sweet aftertaste.
Buying matcha
When purchasing matcha green tea it should be packaged in a way that limit exposure to air and light, otherwise oxidisation will effect the shelf life and diminish the flavour. Once you open it, use it within 2 months for the best colour and flavour. Also, because of the specialised growing conditions and manufacturing process, you can expect to pay a little more than for other green teas.

Matcha Porridge
Ingredients
- 1/2 cup water (125 ml)
- 1 cup oat milk (250 ml)
- 1 teaspoon matcha powder
- 1 cup fine-cut oats (100 g)
- pinch of salt,
- 1-2 teaspoons pure maple syrup, plus more to serve
- Fresh fruit, as topping
Method

In a small saucepan, add the water, milk and matcha, whisk together until combined. Add oats, plus a small pinch of salt and bring to a simmer over medium-high heat. Then reduce the heat to medium to medium-low and cook, stirring occasionally, until the oats are soft and have absorbed most of the liquid, about 5 minutes. Or until the oatmeal has reached your desired consistency.

Stir in maple syrup, to taste.

Serve in bowls and garnish with your favourite toppings, plus a little more maple syrup, if desired. Enjoy!
Notes
- I also like to make this using a mix of fine cut oats and 6-grain oats (2:3 ratio).
- The oats can can also be replaced with an equal amount of Bio Zarte Basis Müsli (Bauck).
