Vegetarian Black Bean Chili

A vegetarian black bean chili is one of those tried and true comfort food meals. It’s a crowd-pleasing, feel-good and ultra-cozy one-pot dish. Roasted sweet potato and zucchini are stars here, along with other aromatics staples like onion, garlic, carrot, celery and sweet red pepper. A fresh chili is added for an extra kick — if you like things hot. Simple tasty ingredients that taste exceptional together with chili spices.

And here is my secret ingredient to transforming a simple vegetarian one-pot dish into something rich with TexMex chili flavors. The chili seasoning is a mix of spices like smoked paprika, rosemary, cumin, oregano, along with chili powder, smoked peppercorns and cacao (the secret to a good chili!). And I’ll share another little secret, or rather a tip, it’s also is fantastic on oven roasted potatoes or homemade fries.

How to make the best Vegetarian Chili

  • A good chili, of course, relies on the proper use of seasoning and aromatics to give it that aromatic, savoury and smoky note. Tomatoes lend an umami element — the so-called yum-factor. And canned beans contribute to it’s delicious plant-based protein and heartiness.
  • Slow cooking (or even cooking ahead of time then reheating) allow time for the flavours to meld into something deeper, tastier. Or a little trick, blending a small portion of the chili also helps release the flavours and give it that desired look and taste of slow cooking.
  • Finishing off the chili with a little squeeze of lime juice and fresh cilantro makes it taste vibrant and fresh. And make all the difference.

Not only is this black bean chili vegetarian. It’s also dairy-free, gluten-free and vegan. To keep it that way, you can enjoy served over whole grain rice. Or on its own with a dollop of coconut yoghurt and slices of avocado (healthy fats!). All natural corn tortillas chips also make a great addition!

Otherwise, how about topping it with some grated cheddar cheese, sour cream or crème fraîche.

Vegetarian Black Bean Chili

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 medium sweet potato, peeled and cut into 2.5-cm cubes (200g)
  • 1 small zucchini, cut into 2.5-cm cubes
  • 2 small yellow onions, finely chopped
  • 3 garlic cloves, minced
  • 2 celery stalks, finely chopped
  • 1 small carrot, finely chopped
  • 1 small pointed red pepper, finely chopped
  • 1 fresh red chilli, seeded and finely chopped
  • 3 tablespoons tomato paste
  • 2 x 400g cans chopped tomatoes
  • 1 tablespoon brown sugar muscovado
  • 1 tablespoon Chili Spice Mix (Elle Herbs)
  • 1/2 teaspoon dried thyme
  • pinch of cinnamon
  • 400 ml water
  • 1 x 400 g can organic black beans
  • 1 small bunch of coriander leaves, chopped
  • Lime wedges, to serve

Method

For the roasted vegetables:

  1. Preheat the oven to 400°F / 200°C and line a baking sheet with parchment paper.
  2. Place the sweet potato pieces on the baking sheet, drizzle with 1 tablespoon olive oil and toss until evenly coated. Season with salt and roast for 10 minutes, then add the zucchini pieces, toss, and cook for a further 5–10 minutes until the vegetables are tender. Set aside.
  3. Roast for 10 minutes, then add the zucchini and cook for a further 5–10 minutes until the vegetables are tender. Remove from the oven and set aside.

For the chili:

  1. While the vegetables roast, heat the remaining oil in a large saucepan, add the onion and cook gently, over medium heat, stirring, for 5-7 minutes, until softened.
  2. Add the garlic, celery, red pepper, carrot, fresh chilli and cook for another 10 minutes.
  3. Add the tomato paste, cook for 1 minute, stirring, then add the canned tomatoes along with the sugar, chili spice mix, thyme and water.
  4. Bring to a simmer and cook, reducing heat to a light simmer, for 20 minutes or so, stirring often, until the chilli has thickened and reduced.
  5. Add the black beans and cook for a further 10 minutes, then stir in the roasted vegetables.
  6. Ladle into bowls and garnish with fresh cilantro (and any other toppings of choice). Serve with lime wedges and enjoy!

Let’s make homemade oven roasted potato wedges. Yessss! These potato wedges are deliciously crispy on the outside and tender, pillowy on the inside. Spiced with the ultimate veggie spice, these are the perfect solution when you are having a French fry craving.

These wedges are generously seasoned with a special mix of spices (paprika, toasted onion, rosemary, thyme, nigella, garlic) — plus an extraordinary special type of salt and pepper. A special Elle Herbs spice mix that make them irresistible. Making them the perfect side dish, appetiser or snack. And yes, we want more, more, more!

How to make oven roasted potato wedges

Fries are good, but wedges are a favourite around here….and all sorts of them. They are also particularly good with a TexMex chili spice. Who knew? Making them is simple. There are only three simple ingredients. Potatoes, olive oil (my favourite kind which is perfect for baking and frying) and the magical spice mix.

  • All you need to do is peel and cut the potatoes (in half lengthwise, and then in half or thirds) so you have 6 wedges. Then toss them together with some oil and spice mix. That’s it.
  • Arrange the potatoes evenly across the baking sheet, with a flat side against the pan.
  • Halfway through the baking flip them over (essential to achieving golden, crispy edges all over). A spatula is your best friend here! And potatoes like space, so no overlapping.
  • Keep them baking till they are golden and crispy along the edges. Don’t pull them out of the oven too early — the aim is golden, crispy oven potatoes!

Serve with whatever sauce or dip you fancy. And if you like a splash of color, parsley is the way to go!

Crispy Oven Roasted Potato Wedges

Ingredients

  • 1 kg large potatoes, peeled, cut in half lengthwise and then cut into wedges (depending on size, 6-8 wedges per potato)
  • 2 1/2 tablespoons extra-virgin olive oil
  • 1 tablespoon Elle Herbs Veggie Spice
  • Flat-leaf parsley, as garnish (optional)

Method

  1. Preheat oven to 375°F / 190°C and line a baking sheet with parchment paper.
  2. In a large bowl, toss the potato wedges with the oil so they are well coated, add the veggie spice, and toss again until evenly coated with the spice. Spread the potatoes in a single layer on the baking sheet and roast in the oven for 30 minutes, flip over the wedges, add continue roasting until golden, about another 30 minutes. Finally, increase the temperature to 400°F / 200°C and cook until crisp, about 10-15 more minutes. Remove from the oven and season with a little more salt.
  3. Remove the potatoes from the oven and serve with your favourite sauce for dipping or enjoy on their own. For a little color, garnish with parsley. Enjoy!

Notes

  • Looking to speed things up? Then bake the potatoes at 220°C for about 35 minutes, flipping halfway through. The crispiness isn’t exactly the same, but tasty nonetheless!
  • For this recipe I use my favorite standby olive oil (Farchioni) which performs especially well and high heat. And it tastes fantastic.

Oh this is a very tasty dish! Bolognese with lentils and salsiccia makes for a deliciously rich pasta bolognese with layer and layers of flavor, texture and umami magic. Mildly spicy Italian sausage add richness to an otherwise vegetarian dish. While my very own Elle Herbs bolognese spice mix adds that extra special flavouring that makes this Italian classic a forever favourite.

Beside adding all the essentials flavours needed for any bolognese recipe, there is one little secret ingredient which adds a little extra umami: dried porcini mushrooms. It gives this spice mix that extra special something that will keep you coming back again and again for more. And of course, quality is king when it comes to any ingredients used in cooking — including spices. So with all natural, high-quality ingredients like tomato, paprika, oregano, garlic, onion, sage and basil it’s easy to make a simple pasta bolognese unforgettable.

How to make this Bolognese Sauce

The preparing part is straightforward, even in a slow-cooked version like this.

  • Sauté the Italian sausage and onion – about 5 minutes;
  • Add the vegetables and let them slowly cook for a good 20 minutes to bring out the flavour and aroma.
  • Add even more aroma with spices and tomato paste which get caramelised by cooking it for 1-2 minutes before add the rest of the ingredients.
  • And here comes the rest. Again slowly cooked, until the lentils are cooked and the sauce richness into something utterly indulgent.

What to serve with Spaghetti Bolognese

  • For a classic Italian dinner, serve this with:
  • Crusty bread, or go extra indulgent and make some homemade garlic bread
  • Green or garden salad with French dressing
  • For a super quick side salad option, you can easily toss arugula leaves with a drizzle of olive oil, lots of lemon juice and grated Parmesan. Simple and delicious. Perfect for an effortless-no-chop salad!

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 300 g Salsiccia Peperoncino (Italian sausage), casings removed and chopped into small pieces
  • 1 small onion, finely chopped
  • 1 small carrot finely chopped
  • 1 celery stalk, finely chopped (optional)
  • 1 tablespoon Elle Herbs Bolognese Gewürz
  • 4 cloves garlic, minced
  • 1 1/2 tablespoons tomato paste
  • 1 x 680 g glass pureed tomato (passata)
  • 125 g French green lentils (lentilles du Puy)
  • 1 1/2 teaspoons sea salt, or to taste
  • Freshly ground black pepper to taste
  • 500 g dried pasta of choice
  • Grated parmesan cheese, for serving
  • Chopped parley, to garnish

Method

  1. 1 Heat the olive oil in a large deep skillet or wok over medium to medium -high heat. Add the sausage and onion and cook until the onion has softened, about 5 minutes. Use a wooden spoon to break up the sausage as it cooks. Stir in the carrot and celery and cook for 5 minutes, then reduce the heat slightly and cook for 15 minutes, until vegetables are tender.
  2. Add the bolognese spice mix and garlic. Stir to combine and cook until fragrant, 1-2 minutes. Add the tomato paste, and cook stirring for another 1-2 minutes.
  3. Add the pureed tomatoes and 1 1/2 cups of water (375 ml). Stir in the lentils and season with salt and pepper. Bring to a simmer, then reduce heat and cook gently until the lentils are tender, about 35-40 minutes. Add more water, if needed.
  4. One the sauce is cooked, reduce heat to low and cover with a lid while you prepare the pasta.
  5. Bring a large pot of salted water to a boil. Add the pasta and cook, according to pasta instructions, until al dente. Drain the pasta and serve with bolognese lentil-salsiccia sauce. Top with Parmesan and parsley and enjoy!

Notes

  • Salsiccia Peperoncino is a mildy spicy Italian sausage. It can also be replaced with very mild Salsiccia. Or if you can only find a mild sausage, you can also add red pepper flakes to the sauce for a little extra spice.

Banana Porridge with Maple Syrup

This healthy banana porridge recipe is one of the easiest and most delicious breakfasts you will ever make! It’s naturally sweet, creamy and filling AND on the table in 15 minutes. What could be more perfect than that?

Things that make this banana porridge recipe perfect:

Hearty oat flakes — fine cut for an extra creamy bowl of porridge. Then there is plant-based milk to ensure even more creaminess. Of course you could use water, but that’s just a little too humdrum. Mashed banana adds natural sweetness, flavor and dose of good for you nutrients. Then there is the Crème de la Crème — vanilla oatmeal spice — a la Elle.

What is vanilla oatmeal spice?

Vanilla oatmeal spice is what separates a good bowl of oatmeal from a great bowl of oatmeal. It’s my very own spice mix made with natural unrefined cane sugar, chia, coconut flakes, ceylon cinnamon, tonka beans, bourbon vanilla and a little gourmet Kalahari Desert salt. A mix that adds both sweetness and an indescribable delicious factor to a simple bowl of oatmeal. A spice mix that is perfect for cooking and as a topper.

How to add more pep and nutrition to a bowl of oatmeal

So now that the basics are covered, there are a few more ways to add even more to your breakfast porridge. If you are looking to add some protein, then a great way to do this is mix in an egg to it the last minute of cooking. You’ll never even know it is there. Or if you want to keep things vegan, then roast some chopped almonds and add them as a topping. Or even easily is to top it with some chia, flax or hemp seeds.

Other topping ideas

  • Toasted coconut flakes or desiccated coconut
  • Cacao nibs or a spoonful of homemade nutella
  • Banana slices
  • A spoonful of Greek yoghurt or natural coconut yoghurt

  1. In a small saucepan, add the milk and oats and bring to a simmer over medium-high heat. Then reduce the heat to medium to medium-low and cook, stirring occasionally, until the oats are soft and have absorbed most of the liquid, about 5 minutes.
  2. Add the mashed banana, and oatmeal spice (plus more to taste); stir to combine. Cook for 2 more minutes (feel free to add a little milk, depending on preferred consistency).
  3. Serve into bowls and garnish with banana slices, maple syrup an da sprinkle of oatmeal spice. Enjoy!
