Every forkful has a little bit of everything, and that’s exactly what makes it so good. Best of all? Just 20 minutes and dinner (or a seriously good lunch) is sorted.

Ingredients for Italian Chopped Salad
What makes this Italian chopped salad so good? It’s the combination of crisp vegetables, salty Italian favourites and a punchy homemade dressing. Every ingredient brings something to the bowl.
- Romaine lettuce and radicchio: Romaine hearts provide a fresh, juicy crunch, while radicchio adds a lovely burgundy colour and a pleasantly bitter edge that balances the richer ingredients.
- Fennel and celery: Thinly sliced fennel brings a subtle aniseed sweetness, while celery adds even more crunch and freshness. Together, they give this salad its wonderfully crisp texture.
- Italian salami: Salame Milano is a great choice for its savoury flavour. Genoa salami is another good option. Choose a good-quality salami and slice it into thin strips so it mixes easily with the vegetables.
- Provolone and Parmesan: Mild provolone adds a creamy, nutty and slightly buttery flavour, while freshly grated Parmesan brings a delicious salty, nutty finish.
- Fresh parsley: A handful of flat-leaf parsley adds colour and a fresh, herby lift.
- Red wine vinaigrette: Extra-virgin olive oil, red wine vinegar, Dijon mustard, honey, garlic and oregano come together in a bright, tangy Italian-style dressing. The little touch of honey is especially good with the bitterness of radicchio.

Handy Tools for Italian Chopped Salad
A couple of kitchen favourites make prepping this salad a breeze. A mandoline slicer is brilliant for shaving fennel into delicate, paper-thin slices (just be sure to use the safety guard!), while a salad spinner gets the romaine and radicchio nice and dry. That way, the vinaigrette coats every leaf beautifully instead of getting watered down.
