Ingredients
  

  • 1 loaf French bread, Italian bread, sourdough or baguette
  • 125 g unsalted butter, softened
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely grated
  • 20 g ramsons (wild garlic), finely chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/8 teaspoon sea salt
  • 3 tablespoons grated Parmesan or aged pecorino (optional)

Instructions
 

  1. Preheat oven to 400°F / 200°C (180°C fan-assisted).
  2. In a small bowl, mix the butter, olive oil, garlic, wild garlic, parsley, and salt until well combined.
  3. Slice the bread in half lengthways using a serrated knife.
  4. Spread the garlic butter evenly over the cut sides. Sprinkle with cheese, if using.
  5. Place on a baking tray, cut side up, and bake for 8–10 minutes, until golden and crisp.
  6. Slice and serve warm. Enjoy!
