Healthy and easy potato recipes

A potato, whether baked, roasted, boiled or mashed: these popular tubers can be prepared in a wonderfully versatile way. And since they are umami powerhouses, they give everything that extra boost of deliciousness.

Whether you are following a vegetarian, vegan or gluten-free diet, there is a recipe for everyone. Here you will find a large selection which ranges from casseroles, to soup and salad, to roasted potatoes, curries and more. You’ll also find recipes classics and new modern ideas.

Types of potatoes

Hardly any food is as versatile as potatoes and with over 200 varieties in the USA and Germany there are many to choose from. Which also means type is of course important. Not every potato can be the star ingredient for mashed potatoes or a potato salad.

At the most basic level, there are two things that sets them apart: the amount of starch versus the amount of water a potato contains. Predominately, there is a basic distinction between mealy/floury, all-purpose (medium-starch) and low-starch (waxy potatoes, which hold their shape) varieties. And this is why it is important to choose the right variety when preparing a certain type of recipe.
